Black sea bream are a representative species of the Sparidae family, alongside the red sea bream, and inhabit almost all of Japan.
While typically found in rocky coastal areas, they are also seen in industrial port areas, brackish waters at river mouths, and even fresh water, making them a popular and familiar target for anglers.
Black sea bream that grow over 50cm, commonly called "Toshinashi" (meaning "ageless" due to their unknown age), are a goal for many anglers. It's truly a marvel to encounter one that has achieved the "smoked silver" appearance from its increased darkness over many years.

Black sea bream is not widely distributed and is considered a fish for anglers.
Depending on the season and location, it can sometimes be said to have a slight磯臭い (isobushii, meaning "fishy" or "seaweedy") smell, but it is fundamentally a delicious fish with firm, mild white flesh.

Black Sea Bream

Classification: Order Perciformes / Family Sparidae / Genus Acanthopagrus

Size: Approx. 30-70 cm in body length

Habitat: Japan (excluding Hokkaido and Okinawa), coastal areas of East Asia

In western Japan, it was called "Chinu," but this name has spread nationwide along with its increasing popularity. While curious, it is also nervous and wary. It is omnivorous, using its sharp teeth to crush and prey on shellfish, crustaceans, and small fish. It is also known as a sex-changing fish; for the first two years after birth, they are male, then go through a period as hermaphrodites, and as they grow, most of them become female, with some exceptions.
