Both the vibrant, beautiful appearance of seasonal sea bream and the appetizing, fragrant sight of grilled sea bream are equally appealing.

Truly the king of fish.
Which do you prefer?

Crispy and perfectly browned on the outside, fluffy on the inside.

Don't forget the sudachi.
Madai
Red Sea Bream
Classification: Perciformes / Sparidae / Pagrus
Size: Approximately 30-80cm in length
Habitat: South of Hokkaido, Taiwan, southern Korean Peninsula, East China Sea
For a long time, due to its vivid red body color and a pun on "medetai" (auspicious), it has been considered a lucky fish and a high-grade ingredient indispensable for celebrations and Shinto rituals. With its dignified appearance and vivid body color, madai is affectionately known as the "king of fish." There is a proverb, "Ebi de tai wo tsuru" (to catch a sea bream with a shrimp), and it is indeed not mistaken in that sense, as it preys on crabs, shrimp, and small fish with its strong teeth and jaws.
